### **Ingredients:**
#### **For Keema (Minced Meat):**
- 500g minced beef/mutton/chicken (finely ground)
- 2 tbsp ginger-garlic paste
- 1 tbsp green chili paste
- 1/2 cup yogurt (for tenderness)
- 1 tbsp lemon juice
- 2 tbsp oil or ghee
- 1 large onion (finely chopped or fried)
- 2 tbsp roasted gram flour (besan)
- 1 tbsp poppy seeds (optional, for richness)
- 1 tbsp sesame seeds (optional, for a nutty flavor)
#### **Spices:**
- 1 tbsp red chili powder
- 1 tsp turmeric powder
- 1 tbsp coriander powder
- 1 tbsp cumin powder
- 1 tsp black pepper powder
- 1 tbsp garam masala
- Salt to taste
#### **For Dum (Smoky Flavor):**
- 1 piece charcoal
- 1 tsp ghee or oil

### **Instructions:**
#### **Step 1: Marinate the Keema**
1. In a bowl, mix **minced meat, yogurt, ginger-garlic paste, green chili paste, lemon juice, besan, poppy seeds, sesame seeds, fried onions, and all the spices**.
2. Let it marinate for at least **1 hour** (overnight for best taste).

3. Heat oil or ghee in a **deep pan/kadhai**.
4. Add the marinated keema and cook on **medium heat** for **15-20 minutes**, stirring occasionally.
5. Lower the heat, cover, and **cook on dum (low flame) for another 10 minutes** until the keema is fully cooked and releases oil.

6. Heat a small piece of charcoal until red hot.
7. Place a small steel/aluminum bowl in the center of the keema.
8. Add a few drops of **ghee or oil** on the hot charcoal and immediately cover the lid for **5 minutes**.
