A classic Irish stew Irish Stew

Lamb shoulder 1k / 2.2lbs
Potatoes 1k / 2.2lbs
White onion 2
Carrots 3
Celery sticks/ribs 2
Leeks 2 small or 1 large
Parsnips 4 small
Herbs of your choice I used rosemary, thyme, bay and parsley

Stock 700ml / 1.5 pints approx

There will be a few upset viewers that say this isn't a proper Irish stew, as this isn't how their mum does it. I've done my best by doing extensive research as I watched at least 2 other videos before getting on with it haha.
This really is a lovely dish, very simple and doesn't need to be elevated or deconstructed in any way. This is comfort food and I have been very comforted by it. I hope you enjoy
