Wonderful to make your own homemade Egg Noodles with Mushrooms, caramelized Onions & Cheese. Served with a Salad on the side.

Egg Noodles with Mushrooms Onions & Cheese
Ingredients:
400 gr. Flour
4 Eggs
Salt
1 cup Whole Milk
3 lrg Onions, peeled, halved & thinly sliced
8-10 oz Mushrooms of your choice, sliced
4 tbsp Italian Parsley, chopped....plus extra to sprinkle
4,5 tbsp Butter, divided
1-1/2 tbsp Italian Seasoning, divided
Salt
Pepper
1-1/4 cups Heavy Whipping Cream
8 oz Mozzarella, shredded

Combine Flour, Eggs, Salt & Milk, mix until smooth.
Rest Batter 5-10 Minutes.
Bring Water in a big Pot to a boil add a large Pinch of Salt.
Push Batter (in batches) through Grater.
Let it come to a boil.
Drain but do not rinse the Egg Noodles.
Heat a large Pan, add 2 tbsp of Butter and Egg Noodles.
Sauté until lightly brown & crisp.

Melt 1/2 tbsp of Butter in Skillet.
Add Mushrooms, season with 1/2 tbsp of Italian Seasoning, sauté, remove.
In same Skillet add 2 tbsp of Butter and Onions.
Season with good Pinch of Salt & Pepper.
Sauté until caramelized.
Mix in Mushrooms, rest of Italian Seasoning, Italian Parsley & Heavy Whipping Cream, warm through.
Add the Onion Mushroom Mixture to the warm crisp Egg Noodles, combine well.
Incorporate Mozzarella Cheese, mix well.
Sprinkle with Parsley and serve.
