Scrumptious Recipe for Curtido (pickled Cabbage)

Recipe for Curtido a pickled Cabbage, great on Pupusas or Hot Dog and Burgers.

Curtido
Ingredients:
1/2 Green Cabbage (6-7 cups), shredded
2 Carrots, shredded
1/2 Red Onion, thinly sliced
1 Jalapeño, halved & sliced
1/2 cup White Vinegar
1 tsp Pickled Salt, more if needed
1 tbsp Oregano

Place Cabbage in a large bowl pour boiling Water over it, keep it in there 1-3 Minutes.
Drain and submerge Cabbage in ice water shortly.
Drain Cabbage and dry.
Combine Cabbage, Carrots, Onions & Jalapeño.
Add Salt, Oregano & Vinegar.
Mix well.
Transfer to airtight Container and refrigerate, several Hours, best overnight.
Stir the Cabbage Mixture occasionally before using.
Enjoy!
