Keto Chocolate Silk Pie - Kinda Like Cheesecake and All Delicious!
Good day and welcome back to the channel!
Today, we're making something rich, creamy, silky, and chocolate-y - chocolate silk pie!
After making chocolate mousse last week, I was reminded of a amazing pie that I'd been introduced to ~ 30 years ago called chocolate silk pie. The original chocolate silk pie is made with crushed chocolate wafer cookies that are mixed with melted butter and placed into a pan for the crust, then there's a creamy, chocolate filling that's topped with whipped cream.
The chocolate mousse video from last week reminded me of that pie, and that's the inspiration for todays video.
The challenge: How to make something tasty and keep the carbs down?
First solution: the crust!
Instead of making a pie crust from crushed chocolate wafer cookies, this recipe uses crushed cinnamon roasted pecans (recipe here: https://youtu.be/g2q1WGPXm30?si=IrRDQROks4HdGg3n) and melted butter.
NOTE: I personally think chocolate and cream/cream cheese pairs BEAUTIFULLY with cinnamon! If you aren't a fan, just roast the pecans and then proceed to grind them up for the pie crust.
Drop ~ 2 cups of pecans in the food processor. Crush the pecans in a food processor until desired consistency. Add ~ 3 - 5 tablespoons of melted butter and pulse until blended. Add roasted pecan mix to the bottom of a pan (or pans) and bake at 375 for ~ 12 minutes. Remove from oven to cool.
Next comes the filling.
1 cup heavy cream
1/2 cup allulose
1/2 cup cocoa powder
1 teaspoon vanilla extract
16 ounces cream cheese (softened)
Drop the cream into a bowl and mix to make whipped cream. When you get to the point of having soft peaks, add the allulose, vanilla and cocoa powder. Mix well. Scrape sides of the bowl to get everything incorporated.
Add cream cheese and mix. Scrape the sides to fully integrate.
Drop creamy, chocolatey mixture into the cooled pie pan(s), then place in a freezer for ~ 2 hours. Once frozen, remove from the freezer and place in the fridge. They'll be ready to serve after ~ 30-60 minutes in the fridge.
Slice and enjoy!!
While this is terrific for folks that are trying to maintain a keto lifestyle, non-keto folks enjoy these as well.
