Sourdough Oatmeal Raisin Walnut Bread

5 Tablespoons butter, melted
1/2 cup pure maple syrup
1/2 cup buttermilk (I use powdered buttermilk)
1/4 cup active sourdough starter
2 eggs, room temperature
171g soft white wheat berries (Save 2 Tablespoons of flour to dust on walnuts and raisins, which keeps them from sinking to the bottom)
64g freshly flaked oats or can use rolled oats from store
1 teaspoon baking powder
1 teaspoon Redmond real salt
1 cup raisins (add warm water in a bowl and soak raisins for 10 minutes. This allows the raisins to hydrate and they won’t pull moisture from your batter)
1/2 cup chopped walnuts
1 heaping teaspoon of cinnamon
1/8 teaspoon of nutmeg

Directions:
Preheat oven to 350 degrees. Melt butter, add pure maple syrup, eggs, buttermilk, sourdough starter into a bowl and mix well. Add salt, baking powder, raisins, flaked oats, and flour and mix well, be careful not to overmix.

Pour batter into a greased loaf pan or muffin pan. If using a loaf pan bake for 30-40 minutes or until toothpick comes out clean. Muffin pan 15 minutes or until toothpick comes out clean.
