Step back in time with me as I try another vintage recipe from The Modern Priscilla Cook Book (1924)! This time, I’m making Eggs Planked—a simple yet elegant baked egg dish nestled in mashed potatoes.

But of course, I had to put my own spin on it! Instead of a pastry bag, I’m shaping the potatoes by hand, and I’m baking them in my Air Fryer Oven instead of a full-size oven. And when I didn’t have radishes for the garnish, I got creative with cheese, bacon, and green onions.

But wait—there’s more! Stick around to the end, because I tried this recipe again a few days later, this time with radishes as the original recipe called for. Was it worth the redo? You’ll have to watch and see!

Recipe Ingredients:
• 6 cups mashed potatoes
• 6 eggs
• Salt & pepper
• Parsley & radishes
Original Baking Instructions:
1. Line shallow dishes with mashed potatoes.
2. Crack an egg in the center, season, and bake at 350°F for 15 minutes.
3. Garnish with parsley & radishes.
