Chicken pcs are first marinated & refrigerated in a yogurt, lemon juice, saffron water marinade for 24 hours. Next they are skewered and baked in the oven. You can also grill them on a grill or grilling pan. Finally, I have served them with red onion slices, seared tomatoes and home made Tahini Sauce. See ingredients & recipe below:

Preparing & Marinating Chicken Joojeh Kebabs:
In a bowl add 1 cup whole milk yogurt
Lemon juice - 1/4 cup
Saffron water - 1 tsp crushed saffron strands in 1/4 cup hot water
Red onion - sliced
Crushed black pepper - 1/2 tsp
Salt - 1.5 tsp
1 clove of minced garlic - optional
Whisk all ingredients listed above then add 2 Lbs of chicken tender pcs
Mix well to coat chicken pcs (2 inch each) evenly
This should make about 4 chicken skewers
Next cover and refrigerate for 24 hours

Cooking Chicken Joojeh Kebabs:
Remove marinated from fridge and set aside for 1 hour
Preheat oven to 400*F
While oven is preheating skewer chicken pcs on wooden skewers
(Make sure the wooden skewers have been soaked in water for 30 minutes)
Place chicken skewers on a baking tray/dish and bake in oven for 20 minutes making sure you turn them half way to ensure cooking on both sides
Now remove baked/cooked Chicken Joojeh Kebabs and baste them with butter generously. Set aside
In a hot pan add 1/4 tsp olive oil and toast 1 pita bread on both sides
Remove pita bread and sear one tomato that is sliced in half for 2 minutes
Slice 1 red onion & season it with salt & black pepper

Making Tahini Sauce:
Grind 2 tbsp toasted sesame seeds to a fine powder & add to a bowl
In the same bowl add 2 cups whisked whole milk yogurt
2 tbsp olive oil
2 tbsp lemon juice
2 cloves of minced garlic,
salt & crushed black pepper to taste
Whisk/mix well to create a smooth Tahini Sauce
Pour Tahini Sauce in a jar with lid for future use

Assembling/Serving Chicken Joojeh Kebab platter:
Place toasted pita bread to one side of the platter
Remove cooked chicken from 2 skewers and place on top of pita bread
Place seasoned red onion sliced, tahini sauce and seared tomato next to the pita bread & chicken. Enjoy!
