Let's talk about breakfast prep!
It's hard to get moving in the morning when it's so cold, so I knew I needed some quick breakfast prep for this week.
Blueberry Muffins
Breakfast casserole
Homemade Instant Oatmeal pack

Blueberry Muffins (Mennonite Cook book)
2 cups flour
4 teaspoons baking powder
1/2 teaspoon salt
4 Tablespoon sugar
2 Tablespoon melted butter
1 egg
1 cup milk
1 cup blueberries

Measure and reserve 3 tablespoon of flour to dust berries (I didn't do since I used freeze dried berries)
To the remaining flour; add the baking powder, salt, and sugar
Add beaten egg and melted butter to the milk and combine with dry ingredients.
Fold in the berries
Fill muffin tins
Bake at 400 for 25 mins
(Honestly these are not the best tasting muffins, but its the recipe I had close by)

Breakfast casserole/sandwiches
4 meat and cheese sandwiches
Beat together
4 eggs
3/4 teaspoon mustard
1/2 teaspoon salt
1 1/2 cup milk
Pour over sandwiches and cover in the fridge over night
Cover with dry cereal and butter before baking
Bake 325 for hour or so

Homemade instant oatmeal packets (www.seasonalhomestead.com)
Base:
5 cups quick oats
2/3 cup sugar
1 teaspoon salt
1/4 cup powered milk
Mix well and put 1/3cup into bags
Add what ever toppings you want
When ready to use- add 2/3 cup water and heat (she said it might look runny but let it set 5 mins and it will thicken)
