Soyless Beef Bulgogi

For the record, Ribeye makes for better Bulgogi so if you can afford it, use that cut.

Recipe below:

Bulgogi - Soyless (4 servings)

Ingredients:
• 1.5 lb (680g) thinly sliced beef (ribeye, tenderloin, etc.)
• 1-2 stalks Green onions, (finely chopped, for garnish.)
• 2 tbsp Avocado oil.
• Generous pinch of toasted sesame seeds, to garnish
• 4 cups hot rice, about 1 cup for each serving
• Kimchi, on the side.
Bulgogi Marinade:
• 1/3 Cup Coconut Aminos
• 1 Tbsp Oyster Sauce (Optional, but also kinda not)
• 1/3 Cup Asian Pear Puree (or Kiwi) (this is for tenderizing. If using Bosc Pear, make it ½ cup because it has much less tenderizing enzymes than Asian Pears.)
• 1 Tbsp Mirin (or white cooking wine)
• 1 Tbsp honey (or 1 Tbsp Brown Sugar, or other sweetener of choice)
• 1 Tsp garlic powder (or 2 Fresh Garlic Cloves minced)
• 1/4 Tsp freshly ground black pepper
• 1 Tsp of sesame oil
• 1 Stalks of green onions/scallions, green part only (finely chopped)

Instructions:
MARINATE THE BEEF
1. First, start with the marinade. In a small/medium container, mix all the marinade ingredients together until well combined and the sugar/sugar substitute is dissolved.
2. Cut the beef into thin bite-sized pieces. (If you can’t get thinly sliced beef, get some steak and freeze for about 20-30 minutes. When it’s partially frozen, it will be a lot easier to slice.) Transfer to the mixing bowl with your marinade.
3. Cover and let it marinate in the fridge for 15 minutes or overnight. Preferably 2 hours or more. (IF YOU ARE USING KIWI, DO NOT MARINATE FOR LONGER THAN ~24 HOURS AS IT CAN OVERLY BREAKDOWN THE MEAT!! Otherwise you can marinate for up to 3 days)

COOK THE BEEF
1. In your pan of choice add 2 tablespoon of oil. Heat it over medium-high heat.
2. Once the oil is heated, working in batches or all at once add the beef. Let the bottom brown for the first 2-3 minutes.
3. Then flip and stir the beef and continue to cook for an additional 2-3 minutes or until the beef is cooked through.

MAKEOUT W/ THE BEEF
1. Place it on a serving plate or plate it right away over some rice sprinkled with sesame seeds and green onions with a side of Kimchi. Make sure to get some good kimchi from an Asian store or Asian market if you can.
2. Whisper sweet nothings to your plate.
3. Place the beef into your mouth and using your tongue either passionately kiss it like a Latin lover or vigorously and messily like we all did in high school with our first boyfriend/girlfriend. Seriously, some of y'all don’t know how to eat. Close your fucking mouths!
