- **500g ash gourd (petha/kaddu), grated**
- **½ cup ghee (clarified butter)**
- **½ cup sugar (adjust to taste)**
- **1 cup milk**
- **¼ cup khoya (mawa) – optional, for richness**
- **½ tsp cardamom powder (elaichi)**
- **2 tbsp chopped almonds & pistachios**
- **1 tbsp desiccated coconut (optional)**
- **Few saffron strands (soaked in 2 tbsp warm milk, optional)**

### **Instructions:**
#### **Step 1: Prepare the Ash Gourd**
1. Peel, remove seeds, and grate the **ash gourd (petha)**.
2. Squeeze out excess water by pressing the grated petha.
#### **Step 2: Cook the Halwa**
1. Heat **ghee** in a heavy-bottomed pan on **medium flame**.
2. Add **grated petha** and sauté for **8-10 minutes** until the raw smell disappears.
3. Pour in **milk**, cover, and cook for **15-20 minutes** until soft.
#### **Step 3: Sweeten & Flavor**
1. Add **sugar** and mix well. The halwa will become slightly watery—keep stirring until it thickens.
2. Add **khoya, cardamom powder, and saffron milk**. Mix well and cook for another **5-7 minutes**.
#### **Step 4: Garnish & Serve**
1. Add **chopped nuts and desiccated coconut**. Mix well.
2. Serve warm, garnished with **more nuts and a drizzle of ghee** for extra richness.
