- 2 tablespoons cream

*For the Rasmalai Balls:*

- 1 liter fresh milk
- 2 tablespoons lemon juice or vinegar
- 1 cup sugar
- 4 cups water

**Instructions:**

1. **Prepare the Caramel:**
- In a saucepan, combine 1 cup of sugar and ½ cup of water.
- Heat over medium flame without stirring until the mixture turns a golden amber color.
- Once the desired color is achieved, remove from heat and carefully add a small amount of water to thin the caramel, stirring gently. Set aside.

2. **Prepare the Milk Syrup (Rabri):**
- In a separate pot, bring 1 liter of milk to a boil.
- Add ½ cup of sugar and ½ teaspoon of cardamom powder; mix well.
- Reduce the heat and let it simmer until it reduces to about half its original volume, stirring occasionally.
- Add the prepared caramel to the reduced milk mixture, stirring continuously to incorporate.
- Once well combined, add 1 tablespoon of kewra water and 2 tablespoons of cream. Mix thoroughly and set aside to cool.

3. **Prepare the Rasmalai Balls:**
- In a pot, bring 1 liter of fresh milk to a boil.
- Add 2 tablespoons of lemon juice or vinegar to curdle the milk. Stir gently until the whey separates.
- Strain the curdled milk using a muslin cloth, rinse with cold water to remove any acidic residue, and squeeze out excess water.
- Knead the resulting paneer (chenna) until smooth and pliable.
- Divide the dough into small portions and shape them into flat discs.

4. **Cook the Rasmalai Balls:**
- In a large pot, combine 1 cup of sugar and 4 cups of water; bring to a boil to create a sugar syrup.
- Gently add the paneer discs into the boiling syrup.
- Cover and cook on medium heat for about 15 minutes, allowing the discs to expand.
- Once cooked, remove the discs and let them cool slightly.

5. **Assemble the Caramel Rasmalai:**
- Gently press the cooked paneer discs to remove excess sugar syrup.
- Place them into the prepared caramel-infused milk syrup (rabri).
- Allow the Rasmalai to soak in the syrup for at least 2 hours to absorb the flavors.
- Serve chilled, garnished with chopped nuts if desired.
