iturn0image0Gajar ki Nawabi Kheer is a luxurious and rich dessert that combines the natural sweetness of carrots with the creaminess of milk and the richness of traditional South Asian sweets. This delicacy is perfect for special occasions and brings warmth during the winter season. Here's a detailed recipe inspired by Food Fusion:
**Ingredients:**
- ½ kg carrots, peeled and grated
- 2 tablespoons ghee (clarified butter)
- 2 green cardamom pods
- 2-3 tablespoons chopped almonds
- 2-3 tablespoons chopped pistachios
- 2-3 tablespoons raisins
- 2 liters milk
- ½ cup rice, soaked for 30 minutes
- ½ cup sugar (adjust to taste)
- 2 pieces of barfi (a type of milk-based sweet)
- ½ teaspoon cardamom powder
- 1 cup pineapple chunks (optional)
- Chum chum sweets (optional)
- Fresh cream for garnish
- Additional chopped almonds and pistachios for garnish
**Instructions:**
1. **Prepare the Carrots:**
- Peel and grate the carrots using a grater. Set aside.
2. **Sauté the Nuts and Raisins:**
- In a large pot, heat the ghee over medium flame.
- Add the green cardamom pods, chopped almonds, pistachios, and raisins. Sauté for 2-3 minutes until they turn golden brown and release a fragrant aroma.
3. **Add Milk and Carrots:**
- Pour in the milk and bring it to a boil.
- Add the grated carrots and soaked rice to the boiling milk. Mix well.
- Once it returns to a boil, reduce the heat to medium, cover the pot, and let it cook for 18-20 minutes. Stir occasionally to prevent sticking.
4. **Mash the Mixture:**
- After the cooking time, use a masher to gently mash the mixture, ensuring the rice and carrots are well integrated into the milk.
5. **Sweeten the Kheer:**
- Add the sugar and mix until fully dissolved.
- Crumble the barfi pieces into the mixture and stir until they melt and combine thoroughly.
6. **Flavor with Cardamom:**
- Sprinkle in the cardamom powder and mix well.
- Cover the pot and let it simmer on low heat for an additional 6-8 minutes, allowing the flavors to meld.
7. **Incorporate Optional Ingredients:**
- If using, add the pineapple chunks and chum chum sweets. Gently mix to distribute them evenly.
8. **Cool and Garnish:**
- Remove the kheer from heat and let it cool to room temperature.
- Once cooled, transfer to a serving dish.
- Garnish with a drizzle of fresh cream and sprinkle additional chopped almonds and pistachios on top.
9. **Serve:**
- Refrigerate the kheer until chilled. Serve cold to enjoy its rich and creamy texture.
This Gajar ki Nawabi Kheer offers a delightful blend of textures and flavors, making it a standout dessert for festive occasions.
