#### **1. Prepare the Mangoes:**
1. Peel and chop the **mangoes** into small pieces.
2. Blend the mangoes into a smooth puree using a blender or food processor.
#### **2. Cook the Mango Puree:**
1. In a pan, add the **mango puree** and **water**. Bring it to a simmer on medium heat.
2. Once the puree starts to simmer, add **sugar** and stir continuously until the sugar is fully dissolved.
3. Cook the mixture for **20-25 minutes**, stirring occasionally, until it thickens and reaches a jam-like consistency. If you want a thicker jam, add **pectin powder** and cook for an additional 5 minutes.
4. Add **lemon juice** and **cardamom powder** (optional) for extra flavor. Stir well.
