### **Warqi Chonge Recipe – Halwai Style by Food Fusion**

**Warqi Chonge** is a crispy, flaky, and layered sweet treat, often found in desi bakeries and halwai shops. It’s similar to puff pastries but with a traditional South Asian touch.

### **Ingredients:**

#### **For Dough:**
- 2 cups all-purpose flour (maida)
- 2 tbsp semolina (sooji)
- 2 tbsp ghee or butter
- ½ tsp salt
- ½ cup water (adjust as needed)
- 1 tbsp sugar

#### **For Layering (Warq Effect):**
- ¼ cup ghee (melted)
- 2 tbsp cornflour

#### **For Sugar Syrup:**
- 1 cup sugar
- ½ cup water
- ½ tsp cardamom powder
- 1 tsp lemon juice

#### **For Frying:**
- Oil or ghee (as needed)

### **Instructions:**

#### **Step 1: Prepare the Dough**
1. In a bowl, mix flour, semolina, sugar, and salt.
2. Add ghee/butter and rub into the flour until it becomes crumbly.
3. Gradually add water and knead into a soft, smooth dough. Cover and let it rest for 30 minutes.

#### **Step 2: Make the Sugar Syrup**
1. In a saucepan, mix sugar and water.
2. Bring to a boil, add cardamom powder and lemon juice.
3. Simmer for 5 minutes until slightly thick. Set aside.

#### **Step 3: Prepare the Layers (Warq Effect)**
1. Mix melted ghee with cornflour to form a smooth paste.
2. Divide the dough into 4 equal portions.
3. Roll out each portion into a thin roti.
4. Brush the first layer with the ghee-cornflour mixture and place another rolled sheet on top. Repeat the process with all layers.
5. Roll up the stacked dough tightly like a Swiss roll.
6. Cut into 1-inch pieces and lightly press each piece into a round shape.

#### **Step 4: Frying & Final Coating**
1. Heat oil/ghee in a pan on medium-low flame.
2. Fry the prepared chonge pieces until golden brown and crispy.
3. Immediately dip in warm sugar syrup for a few seconds.
4. Place on a rack to cool and set.

#### **Step 5: Garnish & Serve**
- Garnish with crushed pistachios or almonds.
- Serve warm and enjoy the crispy, layered goodness!
