### **Ingredients**
#### **For Dough**
- **2 cups all-purpose flour (maida)**
- **¼ cup semolina (sooji)** (for extra crunch)
- **¼ cup ghee (clarified butter)**
- **½ cup water (as needed, to knead)**
- **Pinch of salt**
#### **For Mawa Dry Fruit Filling**
- **1 cup mawa (khoya)** (crumbled)
- **½ cup powdered sugar**
- **¼ cup chopped almonds & pistachios**
- **¼ cup desiccated coconut**
- **½ tsp cardamom powder**
- **1 tbsp raisins**
#### **For Frying & Garnishing**
- **Oil or ghee for deep frying**
- **Silver leaf (optional)**
- **Crushed nuts & saffron strands**

### **Instructions**
#### **Step 1: Prepare the Dough**
1. In a bowl, mix **flour, semolina, salt, and ghee** until it resembles breadcrumbs.
2. Gradually add **water** and knead into a **firm dough**.
3. Cover and let it **rest for 30 minutes**.
#### **Step 2: Prepare the Mawa Filling**
1. In a pan, heat **mawa (khoya)** on low flame until slightly golden.
2. Add **powdered sugar, almonds, pistachios, coconut, cardamom powder, and raisins**.
3. Mix well, remove from heat, and let it cool.
#### **Step 3: Assemble the Gujiya**
1. Roll out **small dough balls** into **thin circles**.
2. Place **1-2 tbsp filling** in the center.
3. Apply water around the edges, fold into a half-moon shape, and **seal tightly** (use a fork or pleat the edges).
4. Repeat with the remaining dough and filling.
#### **Step 4: Fry the Gujiya**
1. Heat **oil or ghee** on medium-low flame.
2. Fry **gujiyas** in batches until **golden and crispy**.
3. Drain excess oil on paper towels.
#### **Step 5: Garnish & Serve**
1. Brush with **silver leaf**, sprinkle **crushed nuts & saffron**, and serve warm!
2. Enjoy with **chai or saffron milk**.
