**Ingredients:**
- Okra (Bhindi): ½ kg
- Oil: 1 tablespoon (for initial cooking) + 2-3 tablespoons (for masala)
- Onion: 1 medium, finely chopped
- Tomatoes: 2 medium, chopped
- Green Chilies: 2-3, chopped
- Ginger Garlic Paste: 1 teaspoon
- Salt: 1 teaspoon (or to taste)
- Red Chili Powder: 1 teaspoon
- Turmeric Powder: ½ teaspoon
- Coriander Powder: 1 teaspoon
- Cumin Seeds: ½ teaspoon
- Fresh Coriander: for garnish
**Instructions:**
1. **Prepare the Okra:**
- Wash the okra thoroughly and pat dry to remove any moisture.
- Trim the ends and cut the okra into 1-inch pieces.
2. **Cook the Okra:**
- In a pan, heat 1 tablespoon of oil.
- Add the chopped okra and sauté on medium heat until they are lightly browned and no longer slimy. This should take about 8-10 minutes. Once done, remove the okra from the pan and set aside.
3. **Prepare the Masala:**
- In the same pan, add 2-3 tablespoons of oil.
- Add cumin seeds and let them sizzle for a few seconds.
- Add the finely chopped onions and sauté until they turn golden brown.
- Add the ginger garlic paste and chopped green chilies. Sauté for another minute until the raw smell disappears.
- Add the chopped tomatoes, salt, red chili powder, turmeric powder, and coriander powder. Mix well and cook until the tomatoes soften and the oil starts to separate from the masala.
4. **Combine Okra with Masala:**
- Add the sautéed okra to the masala.
- Mix gently to ensure the okra is well coated with the masala.
- Cover and cook on low heat for 5-7 minutes, allowing the flavors to meld together. Stir occasionally to prevent sticking.
5. **Garnish and Serve:**
- Once done, garnish with freshly chopped coriander leaves.
- Serve hot with chapati, naan, or steamed rice.
