Vegan Buffalo Cauliflower Tacos

Looking for a delicious and easy-to-make vegan taco recipe? Today, I'm making simple buffalo cauliflower tacos that are a game-changer! It's the perfect vegan twist on traditional tacos and is packed with flavor. In this video, I'll show you how to make this mouth-watering dish from scratch, and the best part is that it's incredibly easy to make.

Ingredients
1 cup of all purpose flour
1 tbsp of potato starch
1 cup of almond milk
3 cups of panko
1 head of cauliflower
1 cup of vegan buffalo sauce
4 tortillas
2 cups of green leaf lettuce
2 tbsp of red onion
Vegan ranch to taste

Directions
1. Preheat oven to 400F and line a baking sheet with parchment paper.

2. Clean and cut cauliflower into florets. Set aside.

3. In a bowl, combine flour, potato starch and almond milk. Mix well. Add 1 cup of panko to a bowl.

4. Coat each cauliflower floret in batter and then panko. Note: To prevent panko from clumping through this process, add panko into the bowl in 1 cup increments)

5. Add cauliflower florets to baking sheet and bake for 40 minutes, flipping after 20 minutes. Remove from oven and let fully cool.

6. While the cauliflower is baking, dice red onion and slice lettuce. Set aside.

7. Add vegan buffalo sauce to a bowl. Once fully cooled, dip each floret into buffalo sauce until well coated.

8. When ready to serve, portion lettuce and red onion among tortillas. Top with cauliflower and drizzle with vegan ranch dressing to taste. Serve and enjoy!
