Panjiri is a traditional South Asian sweet, often prepared during winters for its health benefits and rich flavors. Food Fusion offers a delightful recipe that combines various nutritious ingredients. Here's a concise version of their recipe:
**Ingredients:**
- **Char Maghaz (Mixed Melon Seeds):** ¼ cup
- **Safed Til (White Sesame Seeds):** 3 tablespoons
- **Desi Ghee:** 2-3 tablespoons
- **Phool Makhana (Lotus Seeds):** 1 cup
- **Gond (Edible Gum):** 2 tablespoons
- **Desiccated Coconut:** ½ cup
- **Almonds (chopped):** ¼ cup
- **Pistachios (chopped):** ¼ cup
- **Raisins:** ¼ cup
- **Sugar:** ½ cup (adjust to taste)
- **Green Cardamom Powder:** ½ teaspoon
**Instructions:**
1. **Roast Melon and Sesame Seeds:**
- In a pan over low heat, dry roast the char maghaz until they release a nutty aroma. Set aside.
- Similarly, dry roast the safed til until they turn light golden. Set aside.
2. **Prepare Phool Makhana:**
- In the same pan, heat 1 tablespoon of desi ghee. Add the phool makhana and roast until they become crispy. Remove and set aside.
3. **Fry Gond:**
- Add another tablespoon of ghee to the pan. Once hot, add the gond. Fry until it puffs up and turns golden. Remove and set aside.
4. **Roast Desiccated Coconut:**
- In the same pan, roast the desiccated coconut until it achieves a light golden hue. Set aside.
5. **Roast Nuts and Raisins:**
- Add the chopped almonds and pistachios to the pan. Roast until fragrant.
- Add the raisins and roast briefly until they swell. Remove and set aside.
6. **Grind Ingredients:**
- Coarsely grind the roasted phool makhana and gond separately.
7. **Combine All Ingredients:**
- In a large mixing bowl, combine the roasted melon seeds, sesame seeds, ground phool makhana, ground gond, desiccated coconut, roasted nuts, and raisins.
- Add sugar and green cardamom powder. Mix thoroughly to ensure even distribution.
8. **Final Touch:**
- If the mixture appears dry, you can add a little melted ghee to bind it.
9. **Storage:**
- Store the panjiri in an airtight container. It can be enjoyed over several weeks.
