Food Fusion presents a flavorful Aloo Dum Biryani recipe that combines tender potatoes with aromatic spices and basmati rice. Here's a concise version of their recipe:

**Ingredients:**

- ½ kg small potatoes, peeled
- ¼ tsp yellow food color
- 2-3 tbsp cooking oil
- A pinch of salt
- 1 cup whisked yogurt
- ½ tbsp red chili powder (adjust to taste)
- 1 sachet (10 g) Knorr chicken powder
- 1 tsp garam masala powder
- ½ tsp turmeric powder
- 1 tbsp coriander powder
- 1 tsp salt (adjust to taste)
- ¼ tsp nutmeg & mace powder
- 2 tbsp lemon juice
- ½ tbsp ginger garlic paste
- 2 tbsp crushed green chilies
- ½ cup fried onions
- ¼ cup cooking oil
- ½ cup chopped mint leaves
- ½ cup chopped fresh coriander
- ½ kg basmati rice (boiled until ¾ done)
- 1 sachet (10 g) Knorr chicken powder
- 1½ tbsp ghee
- 1-2 tbsp water
- ½ tsp yellow food color
- Additional fried onions for garnish

**Instructions:**

1. **Prepare the Potatoes:**
- In a bowl, mix yellow food color with a pinch of salt and a little water to form a paste. Apply this mixture to the peeled potatoes.
- Heat 2-3 tbsp of cooking oil in a pan and fry the colored potatoes until they are golden brown. Remove and set aside.

2. **Marinate the Potatoes:**
- In a large bowl, combine whisked yogurt, red chili powder, Knorr chicken powder, garam masala, turmeric powder, coriander powder, salt, nutmeg & mace powder, lemon juice, ginger garlic paste, crushed green chilies, and fried onions. Mix well.
- Add the fried potatoes to this mixture, ensuring they are well-coated. Let them marinate for about 30 minutes.

3. **Prepare the Rice:**
- Boil the basmati rice until it's ¾ cooked. Drain and set aside.

4. **Assemble the Biryani:**
- In a large pot, heat ¼ cup of cooking oil. Add the marinated potatoes along with the marinade. Cook for a few minutes until the oil separates.
- Layer the partially cooked rice over the potato mixture. Sprinkle chopped mint leaves, fresh coriander, and fried onions over the rice.
- Dissolve Knorr chicken powder in 1-2 tbsp of water and pour over the rice. Drizzle ghee and sprinkle yellow food color on top.

5. **Dum Cooking:**
- Cover the pot with a tight-fitting lid to trap the steam. Cook on high heat for 5 minutes, then reduce to low heat and cook for an additional 15-20 minutes to allow the flavors to meld and the rice to fully cook.

6. **Serve:**
- Once done, gently fluff the biryani to mix the layers. Serve hot, garnished with additional fried onions if desired.
