Super Sized Baked Egg Bites

Good day and welcome back to the channel. Today, we're taking a variation of a previous video: egg bites. This time, we're changing things up and going BIG! These are super sized egg bites! And, we're baking them today (but using a water bath to keep the eggs super tender).

Basic mix:
6 eggs
~ 1/3 cup of full fat cottage cheese
~ 1/16 teaspoon Complete Seasoning (Badia)
~ 1/16 teaspoon of granulated garlic
~ 1/8 teaspoon granulated onion

The awesome thing about egg bites is that they can include whatever you would like! In the previous video, I made crab eggs bites. If you would like that recipe, the video is here:

For today's version, we're using some hot Italian sausages that I cooked yesterday; some sauteed mushrooms with some diced shallot and butter; some Cooper Sharp cheese, and some sliced scallions.

Process:
Prepare cooking vessels (I used some rendered bacon fat)
Preheat oven to 350 degrees
Start a pot of water boiling
Mix eggs, cottage cheese and seasonings in a blender to thoroughly incorporate
Fill prepared baking dish ~ 1/3 full
Drop in prepared add ins
Cover with remaining egg mix until cooking dish is ~ 2/3 full
Cover and place in a pan
Add boiling water to the pan until the water level is ~ the same height as the egg mix
Place pan in pre-heated oven and bake until the middle is set (~ 25 minutes)
Remove baking dishes from the water pan.
Use a knife or straight edge to loosen the eggs from the pan.
Cover with a small plate and then invert the pan (be careful! That baking dish will be hot!)
Lift baking dish
