Instant Pot Leftover Pulled Pork Chili

Ingredients:

Splash of olive oil
4 cloves garlic, minced
1 small to medium red onion, diced
2 cups water (or beef broth, if not using the pork bone)
1 (28 oz) can of tomato sauce
1 (28 oz) can diced tomatoes
¼ cup BBQ sauce
Saved bone from pork shoulder (optional)
2 (14 oz) cans black beans, drained and rinsed
2-3 dried cayenne peppers (or 1tsp chili powder)
1 tbs kosher salt
1 tsp black pepper
1 tsp onion powder
½ tsp smoked paprika
½ tsp ground cumin
¼ tsp dried cilantro
¼ tsp ground coriander
2 lbs leftover pulled pork (can be frozen)

Instructions:

Prepare the Instant Pot: Insert the liner into your 6-quart Instant Pot. Select the sauté mode and let it preheat until hot. Add a splash of olive oil to coat the bottom.

Cook Aromatics: Add the diced red onion and minced garlic to the pot. Sauté for 2-3 minutes, stirring frequently, until the onion becomes soft and the garlic is fragrant.

Deglaze the Pot: Pour in the water (or beef broth) and use a spatula to scrape up any browned bits (fond) from the bottom of the pot. This adds a lot of flavor to your chili.

Combine Ingredients: With the Instant Pot still on sauté mode, add the tomato sauce, diced tomatoes, BBQ sauce, pork bone (if using), black beans, dried cayenne peppers, kosher salt, black pepper, onion powder, smoked paprika, ground cumin, dried cilantro, and ground coriander. Stir everything together until well combined.

Add Pulled Pork: Place the leftover pulled pork on top of the mixture. If the pork is frozen, there’s no need to thaw it beforehand. Leave the Instant Pot on sauté mode until the mixture comes to a boil.

Slow Cook: Cancel the sauté mode and select the slow cook mode on "Normal". Cover with the lid and cook for 8-10 hours.

Remove the Bone and Peppers: If you used the pork bone and/or dried cayenne peppers, carefully remove them from the chili and discard before serving.

Serve: Once cooked, give the chili a good stir. Serve hot with a dollop of sour cream, chopped green onions, and a side of cornbread.
