Here's a recipe to make Kadhai Paneer, a delicious and flavorful Indian dish:

Ingredients:

Paneer (cottage cheese): 250 grams (cut into cubes)

Capsicum (green bell pepper): 1 large (sliced or diced)

Onion: 1 large (sliced)

Tomatoes: 3 large (pureed)

Ginger-garlic paste: 1 tablespoon

Green chilies: 2 (slit or chopped)

Dry red chilies: 2

Coriander seeds: 1 tablespoon

Cumin seeds: 1 teaspoon

Turmeric powder: ½ teaspoon

Red chili powder: 1 teaspoon

Garam masala: ½ teaspoon

Kasuri methi (dried fenugreek leaves): 1 teaspoon (crushed)

Fresh cream: 2 tablespoons (optional)

Oil or ghee: 2 tablespoons

Salt: to taste

Coriander leaves: for garnish

Method:

Step 1: Prepare the Kadhai Masala

1. Dry roast coriander seeds and dry red chilies in a pan until aromatic.

2. Let it cool, then coarsely grind them using a mortar-pestle or blender. Set aside.

Step 2: Cook the Base

1. Heat oil in a kadhai (or wok). Add cumin seeds and let them splutter.

2. Add ginger-garlic paste and sauté until raw aroma disappears.

3. Add the sliced onions and cook until golden brown.

Step 3: Add Tomatoes and Spices

1. Stir in the tomato puree and cook until the oil separates.

2. Add turmeric powder, red chili powder, and the ground kadhai masala. Mix well.

Step 4: Add Vegetables and Paneer

1. Toss in the sliced capsicum and sauté for 2–3 minutes.

2. Add the paneer cubes, salt, and mix gently so the paneer doesn’t break.

Step 5: Final Touch

1. Sprinkle garam masala and kasuri methi. Stir well.

2. (Optional) Add fresh cream for a richer taste.

3. Garnish with fresh coriander leaves.
