Oatmeal Cookies made from whole wheat flour

Cutting back on processed food and trying to save money by making foods from scratch as much as possible. Also, trying to switch from All Purpose flour to Freshly Milled Flour as much as possible.

Oatmeal Cookies made with Whole Wheat Flour. 350ºF/177ºC 8-10 min.
1/2 cup (114g) butter
3/4 cup (146g) packed brown sugar
1/2 cup (100g) granulated sugar
**Cream 2-3 minutes
2 room temperature eggs
**add eggs one at a time, mixing in between each addition
2 teaspoons (9g) vanilla extract
1 teaspoon (4g) baking soda
1 teaspoon (3g) cinnamon - optional ingredient
1/2 teaspoon (3g) salt
**Mix well
2 cups-minus 2 Tablespoons (212g) soft whole wheat (I used freshly milled)
**regular whole wheat flour works as well
**Mix in slowly
3 cups (270g) rolled oats
**Mix slowly, very heavy batter
***May add up to one cup of additional items (chocolate chips, raisins, nuts, coconut,...)
**Refrigerate for 30-60 minutes
**scoop and roll into balls, place back in refrigerator while the oven is preheating to 350ºF/177ºC
**Bake 8-10 minute
**Use a spatula to slightly flatten the cookies as soon as they are removed from the oven.
**Let cookies cool for 2 minutes on the cookie try, then move them to a cooling rack
