Ingredients
For the Honey Mustard Smoked Ham:
1 spiral-cut ham (8-10 lbs), glaze packet discarded
Mustard (as a binder)
Sweet Heat rub or your favorite BBQ seasoning

For the Honey Mustard Glaze:
1 cup orange juice
1/2 cup brown sugar
1 cup honey
1/4 cup yellow mustard
2 tablespoons Dijon or spicy brown mustard
2 tablespoons Worcestershire sauce
2 teaspoons cayenne pepper (optional)
For the Sandwiches:
Sandwich rolls
Slices of smoked ham
2 slices Swiss cheese (per sandwich)
2 slices dill pickles (per sandwich)
2 slices provolone cheese (per sandwich)
Butter (for toasting)

Instructions

Step 1: Prepare the Ham
Remove the spiral ham from its packaging and discard the glaze packet. Pat the ham dry with paper towels to remove any excess moisture. Apply a thin layer of mustard as a binder, ensuring it coats all sides of the ham. Season generously with a sweet heat BBQ rub or your favorite BBQ seasoning, pressing it into the surface for maximum flavor.

Step 2: Smoke the Ham
Preheat your Green Mountain Grills pellet smoker to 250°F. Once the smoker reaches temperature, place the seasoned ham directly on the grill grates. Close the lid and let it smoke undisturbed for one hour smoking a ham in the pellet smoker

Step 3: Make the Honey Mustard Glaze
While the ham smokes, prepare the glaze. In a saucepan, combine 1 cup orange juice, 1/2 cup brown sugar, 1 cup honey, 1/4 cup yellow mustard, 2 tablespoons Dijon or spicy brown mustard, 2 tablespoons Worcestershire sauce, and 2 teaspoons cayenne pepper (if using). Simmer over medium heat, stirring frequently, until the glaze thickens slightly. Remove from heat and set aside.

Step 4: Glaze the Ham
After the first hour of smoking, begin basting the ham with the honey mustard glaze. Use a brush to apply a generous layer, ensuring it coats all sides. Continue adding layers of glaze every 45 minutes, allowing it to caramelize and build up a flavorful crust.

Step 5: Monitor the Temperature
Smoke the ham until it reaches an internal temperature of 145°F. Use a meat thermometer to ensure accuracy. Once the ham is cooked, remove it from the smoker and let it rest for 15-20 minutes. Resting allows the juices to redistribute, ensuring every slice is moist and flavorful.

Step 7: Make the Sandwiches
For Honey Mustard Smoked Ham Sandwiches, start by buttering the sandwich rolls. On the bottom half, layer Swiss cheese, slices of smoked ham, and two slices of dill pickles.
Add provolone cheese on top of the ham, then place the top bun. Heat a griddle to medium heat and place the sandwiches on it. Press down gently to flatten, then toast for 2-3 minutes on one side.
