Roasted Kabocha Squash is a scrumptious Side Dish.

Roasted Kabocha Squash
Ingredients:
1-4lb Kabocha Squash, washed
1-1/2 tsp Italian Seasoning
1/2 tsp Salt
1/2 tsp smoked Paprika
1/2 tsp granulated Garlic
2 tbsp EVO Oil
1/4 tsp Black Pepper
1-2 tbsp Parsley, chopped

Line Baking Sheet with Parchment Paper.
Preheat Oven 425°F
Cut the Ends off the Kabocha.
Slice in half from stem to root.
Remove Seeds and cut in 1/2 - 3/4" Wedges.
Place Wedges in large bowl.
Coat Squash with Italian Seasoning, Salt, Paprika, Garlic, Oil & Pepper.
Place Squash in single layer on prepared Baking Sheet.
(use 2nd Sheet if needed)
Roast Kabocha for 15 Minutes.
Flip each Piece and continue roasting until tender approx. 10-15 Minutes.
Sprinkle with Parsley.
