SWEET & ZESTY Lemon Coconut Bars Recipe

Just so sweet and lemony! This recipe is a new one for us and we loved it and was pretty simple to make. I started with the pastry cutter for the crust and found it was easier to just use hands for it since it needed pressed into the baking dish. Hope you love it, too!

Recipe:
1-1/2 cups all-purpose flour
1/2 cup confectioners' sugar
3/4 cup cold butter, cubed
4 large eggs, room temperature
1-1/2 cups sugar
1/2 cup lemon juice
1 teaspoon baking powder
3/4 cup sweetened shredded coconut

Directions:

Preheat oven to 350°. In a small bowl, combine flour and confectioners' sugar; cut in the butter until crumbly. Press into a lightly greased 10x8-in. baking pan. Bake for 15 minutes.

Meanwhile, in another small bowl, beat the eggs, sugar, lemon juice and baking powder until combined. Pour over crust; sprinkle with coconut.
Bake until golden brown, 25-30 minutes. Cool on a wire rack. Cut into bars.
