Ingredients:

500 g of chickpeas (soaked in water for 12 hours, not cooked)
1 onion (chopped)
3 garlic cloves (chopped)
1/2 cup of fresh cilantro (chopped)
1/2 glass of water
Salt, to taste
Pepper, to taste
1 teaspoon of ground cumin
1/2 teaspoon of baking soda
70 g of breadcrumbs
Vegetable oil (for frying)
Instructions:
Blend the mixture:

Drain the soaked chickpeas well and add them to a blender or food processor.
Add the chopped onion, garlic, cilantro, and half a glass of water. Blend until you get a smooth and consistent mixture.
Season and bind:

Transfer the blended mixture to a bowl.
Add salt, pepper, ground cumin, baking soda, and breadcrumbs. Mix well until the mixture holds together and is easy to shape.
Shape and fry:

Form small balls or patties with the mixture.
Heat vegetable oil in a deep pan over medium heat.
Fry the falafel until golden brown on all sides, then place them on paper towels to drain excess oil.
Serve and enjoy:

Serve the falafel warm with pita bread, hummus, tahini sauce, or your favorite salad.
