Beef Paya, also known as Beef Trotters, is a traditional Pakistani dish renowned for its rich and flavorful broth. Mubashir Saddique, a popular YouTuber from the Village Food Secrets channel, has shared an authentic recipe for this delicacy.

**Ingredients:**

- 4 beef trotters (paye)
- 2 large onions, finely sliced
- 2 tablespoons ginger-garlic paste
- 2 tomatoes, chopped
- 1 cup yogurt
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- Salt to taste
- Whole spices: 4-5 cloves, 2-3 green cardamoms, 1 black cardamom, 1-inch cinnamon stick
- Fresh coriander leaves, chopped (for garnish)
- Fresh ginger, julienned (for garnish)

**Instructions:**

1. **Cleaning the Trotters:** Thoroughly clean the beef trotters under running water to remove any impurities.

2. **Boiling:** In a large pot, add the cleaned trotters and enough water to cover them. Bring to a boil, then reduce heat and simmer for 3-4 hours until the meat becomes tender and the broth is rich. Alternatively, a pressure cooker can be used to reduce cooking time.

3. **Preparing the Masala:** In a separate pan, heat oil and add whole spices. Sauté until aromatic. Add sliced onions and cook until golden brown. Stir in ginger-garlic paste and sauté for a few minutes. Add chopped tomatoes and cook until they soften. Mix in yogurt, turmeric, red chili, coriander powder, and salt. Cook the masala until oil separates from the mixture.

4. **Combining:** Add the prepared masala to the pot with the trotters and broth. Mix well and let it simmer for an additional 30-45 minutes, allowing the flavors to meld together.

5. **Serving:** Garnish with fresh coriander leaves and julienned ginger. Serve hot with naan or steamed rice.
