Making Tomato Sauce
I needed room in my freezer and wanted to get these tomatoes used up! So it turned into sauce day. This is a recipe that has been in the family and it's a good one!
It's pretty simple and can be adjusted.
Bonus for winter canning; it warms you up!
Recipe: Tomato sauce (or cook down/drain water to make BBQ sauce)
2 gallons of pulp (from cooked tomatoes and ran through food mill)
2 med onions
2 cloves of garlic
1/2 cup whole mixed spice
2 sweet peppers
2 cup brown sugar
1/2 cup salt
2 cup vinegar
1 1/2 tsp dry mustard
1 1/2 tsp black pepper
1 tsp red pepper
1/2 cup horseradish
2 cup sugar
Allow pump to stand until water comes to the top (or cook down) *I cooked it down before turning it into pump
Add onions, garlic, spices, and sweet peppers in a cloth bag and cook for 30 mins
Add remaining ingredients mixed together and cook for another 30 mins
Take bag out and put into jars to seal
