Delicious Chicken & Veggie Casserole Recipe

Chicken & Vegetables in one Dish, delicious Casserole served over Rice, mashed Potatoes or Pasta a great Dinner for the Family.

Chicken Veggie Casserole
Ingredients:
4 cups Rotisserie Chicken, shredded
10 oz Mushrooms assorted, sliced
1/2 cup Onions, diced
3 Garlic Cloves, diced
2 cans (10.5 oz each) Cream of Mushroom Soup
5 oz Sour Cream
1/2 cup Whole Milk
1 Egg
1/2 tsp Salt
1 tsp Italian Seasoning
1/4 tsp Pepper, plus Pinch
1/2 cup Whole Kernel Corn
1/2 cup Peas
1-1/2 cups Carrots, sliced/steamed
3 cups Broccoli, cut bite sized/steamed
12 oz Cheddar Cheese, shredded/divided
2 tbsp fresh Parsley, chopped
3/4 cup Sourdough Bread Crumbs
3-1/2 tbsp Butter, divided (plus more to butter dish)

Heat 1-1/2 tbsp of Butter in Skillet.
Sauté Mushrooms, season with a Pinch of Pepper.
Add Onions & Garlic, sauté and set aside.
Generously butter Casserole Dish.
Preheat Oven 350° F.
Combine Cream of Mushroom Soup, Sour Cream, Milk, Egg, Salt, Italian Seasoning & Pepper, whisk well.
Incorporate Mushroom Mixture, Corn, Peas, Parsley, Carrots, Broccoli, Chicken and 8 oz Cheese.
Spread out Mixture in Dish.
Top with 4 oz. Cheese.
Combine Bread Crumbs and 2 tbsp melted Butter.
Sprinkle Bread Crumb Mixture over Cheese.
Cover with Foil.
Bake for 30 Minutes.
Remove Foil and continue baking for 10-15 Minutes or until golden & bubbly.
Rest for a few Minutes and serve.
