### Ingredients:
#### For Marination:
- 500g boneless chicken (cubed)
- 2 tablespoons yogurt
- 1 tablespoon fresh cream
- 1 teaspoon ginger-garlic paste
- 1/2 teaspoon white pepper powder
- 1/2 teaspoon salt (adjust to taste)
- 1/2 teaspoon garam masala powder
#### For the Gravy:
- 2 tablespoons butter (unsalted, preferably)
- 1 tablespoon oil
- 1 medium onion (finely chopped or blended into a paste)
- 1 teaspoon ginger-garlic paste
- 2–3 green chilies (finely chopped)
- 1/2 cup fresh cream
- 1/4 cup milk
- 8-10 cashews (soaked and blended into a paste)
- 1/4 teaspoon white pepper powder
- 1/2 teaspoon garam masala powder
- 1/2 teaspoon kasuri methi (dried fenugreek leaves, crushed)
- Salt (to taste)
- Fresh coriander leaves (chopped, for garnish)

### Instructions:
#### 1. **Marinate the Chicken**
- In a bowl, combine chicken with yogurt, cream, ginger-garlic paste, white pepper powder, garam masala, and salt.
- Mix well and let it marinate for 30 minutes to 2 hours.
#### 2. **Sear the Chicken**
- Heat butter and oil in a handi or heavy-bottomed pan over medium heat.
- Add the marinated chicken and cook until lightly browned and half-cooked (5–7 minutes). Remove and set aside.
#### 3. **Prepare the Gravy Base**
- In the same handi, add onion paste and sauté until translucent.
- Stir in ginger-garlic paste and chopped green chilies, cooking until fragrant.
- Add the cashew paste and cook for 2–3 minutes, stirring continuously.
#### 4. **Cook the Chicken**
- Return the seared chicken to the handi. Mix well and cook for 5 minutes.
- Add milk, cream, white pepper powder, and salt. Stir gently to combine.
#### 5. **Simmer and Finish**
- Lower the heat and add garam masala and crushed kasuri methi.
- Let the gravy simmer for 5–7 minutes until the chicken is fully cooked and the sauce thickens.
#### 6. **Garnish and Serve**
- Garnish with fresh coriander leaves and a drizzle of cream (optional).
- Serve hot with naan, paratha, or steamed rice.
