2. In a medium bowl, mix the wet ingredients. In a large mixing bowl, combine all of the dry ingredients and add the wet ingredients until you have a smooth batter (einkorn is finicky so don’t over work), and then fold in the blueberries (if you have any flour left, dust the blueberries to eliminate them sinking to the bottom).
3. Scoop batter into a lined muffin pan, filling each cup abut 3/4 full.
4. Bake muffins for 20-24 or until a toothpick inserted into a muffin comes out clean. Cool for 5 minutes in pan and then put on cooling rack.
