- Gochugaru (Korean chili flakes) – 1 tbsp
- Garlic powder – 1 tsp
- Onion powder – 1 tsp
- Salt & black pepper – to taste
#### Sauce (Sweet & Spicy Korean Sauce)
- Gochujang – 2 tbsp
- Soy sauce – 1 tbsp
- Honey – 2 tbsp
- Rice vinegar – 1 tbsp
- Sesame oil – 1 tsp
- Garlic (minced) – 1 clove
#### Burger Assembly
- Soft brioche buns – 4
- Kimchi slaw (recipe below)
- Pickled radish or daikon
- Korean mayo (mix regular mayo with a bit of gochujang and sesame oil)
#### Kimchi Slaw
- Kimchi – 1/2 cup (chopped)
- Shredded cabbage – 1 cup
- Carrot (julienned) – 1 small
- Green onion – 1 stalk (sliced)
- Sesame oil – 1 tsp
- Rice vinegar – 1 tbsp

### **Steps to Make It**
#### 1. **Marinate the Chicken**
1. Mix buttermilk, gochujang, salt, and pepper in a bowl.
2. Add chicken and marinate for 4–12 hours in the fridge for maximum flavor and tenderness.
#### 2. **Prepare Crispy Coating**
1. Combine all coating ingredients in a large bowl.
2. Remove chicken from marinade, shake off excess, and coat thoroughly in the flour mixture. Press the coating onto the chicken for extra crispiness.

1. In a small saucepan, mix gochujang, soy sauce, honey, rice vinegar, sesame oil, and minced garlic.

#### 5. **Kimchi Slaw**
1. Mix chopped kimchi, cabbage, carrot, green onion, sesame oil, and rice vinegar in a bowl. Adjust seasoning to taste.

1. Toast the brioche buns lightly.
2. Spread Korean mayo on the bottom bun.
3. Add the crispy fried chicken, kimchi slaw, and a few slices of pickled radish.
