Breakfast Burrito Recipe (6 burritos)

INGREDIENTS
6 flour tortillas (8-10 inch)
6 eggs
2 bell peppers
1 onion
2 cups shredded cheese
2 avocados (optional)
1 tbsp butter
Cooking oil
1/2 cup water
1 lb/ 450g sausages (chorizo, Italian sausage or ground meat with seasonings of choice)

METHOD
1. Whisk eggs in a bowl. Melt butter on low heat and scramble until set to your liking. Add salt to taste and transfer to a bowl.
2. Dice the onions and bell peppers.
3. Remove sausages from the casing and break up the sausages. Transfer to a pan along with 1/2 cup water, cover and cook for 5 minutes. Next add the diced onions and bell peppers. Cook for 5 minutes, garnish with cilantro (optional) and set aside.
4. If the tortillas are not soft, microwave them for 30 seconds or lightly heat over a pan.
5. Place a tortilla on a flat surface. Layer shredded cheese, scrambled eggs, sausage mix, add sliced avocado and roll tightly.
6. Lightly coat a skillet with oil and cook the burritos until golden brown on all sides.
