Happy New Year! As #KennyRogers would say, you have to know when to hold ‘em. In #cooking there is an #order , to achieve perfect #results. When making #blackeyedpeas , or beans, I like to use #ham #stock . I bake a ham just for the stock! I don’t want the #peas to absorb the ham stock. Why? Because I would have to add water to make up for the loss of stock. This would dilute the ham flavor. Instead cook the peas in water, spices and vegetables. When most of the water is absorbed; add the ham stock. You’ll have #blackeyedpeas , in a rich ham stock. Please #follow #therighteouskitchen across #socialmedias .
