He does it all for the love of the pig. Pierre Franey has a very strong accent, please pray for the closed captions. This was recorded in 1992. Pierre seems like a lot of fun and I would defintely hang out with this character. That opening goes hard. I like how he gets dressed up as a tin can and then starts playing the vest like an instrument. They don't make em like they used to... Even more 90's lost media coming soon. Stay tuned.

Summary:

"In this cooking tutorial, the chef walks viewers through the preparation of two delicious pork dishes: pork medallions and an Oriental-style pork burger. Here's a breakdown:

Dish 1: Pork Medallions
Meat Preparation: The chef demonstrates trimming pork loin, explaining the importance of a little fat for flavor. He cuts the meat into uniform medallions and lightly flattens them to ensure even cooking.
Cooking: The medallions are seared in a sturdy pan, ensuring they don’t stick, and cooked at high heat to retain moisture.
Sauce and Sides: A savory sauce is made with onions, garlic, vinegar, chicken stock, and tomato paste. The medallions are paired with string beans, sautéed shallots, and a garnish of fresh herbs.

Dish 2: Oriental-Style Pork Burger
Patty Preparation: Ground pork is mixed with scallions, coriander, fresh ginger, garlic, breadcrumbs, and seasonings like Tabasco and soy sauce. The mixture is gently handled to maintain tenderness and divided into patties.

Cooking and Serving: Some patties are pan-fried, while others are braised. They're served with vibrant, lightly cooked baby vegetables (zucchini, eggplant, squash, and tomatoes) and a citrus-soy sauce.

Throughout the video, the chef shares tips for maximizing flavor, proper meat handling, and the importance of presentation. The dishes are beautifully plated with fresh herbs from the chef’s garden, and he emphasizes the joy of cooking and using fresh ingredients."
