Sourdough is a wonderful traditional cooking method that prepares grains for best nutrition and digestion.

And... you can use it with gluten free grains just like you can use it with your wheat and your spelt, etc.

This will open up a whole new world of possibilities if you've had to be gluten free or had to have family members be gluten free!
