Portuguese Arroz de Marisco (Seafood Rice)
Ingredients (Serves 4-6)
For the Base:
• 2 tablespoons olive oil
• 1 large onion
• 3 cloves garlic
• 1 red bell pepper
• 2 large ripe tomatoes(or 200 g canned tomatoes)
• 1 Tbsp Tomato paste
• 1 Tsp Sugar
• 1 Tsp Fish Sauce
• 1 Bunch parsley stems
• 2 bay leaf
• 150 ml white wine
• 1 chilli (optional)
• 1l prawn stock
• 350 g Arborio rice or other medium-grain rice
• Salt

For the Seafood:
• 500 g peeled prawns
• 500 g cockles
• 200 g crab meat
• 5/6 Shelled prawns for decorating
For Seasoning and Garnish:
• 1 small bunch of fresh parsley
• Lemon wedges for serving
