Keto Chicken Sausage Recipe
Ingredients:
* 1 kg chicken (breast)
* 6 cloves garlic
* 3 egg yolks
* 2 tbsp olive oil
* 5 mushrooms
* 1 tsp paprika
* 1 tsp thyme
* 1 tsp ginger
* 3 whole cardamom pods (finely ground)
* 1 tsp curry powder
* 1/4 tsp cloves
* 1 tbsp nutmeg
* Salt
* Black pepper (coarsely ground)
* 1 tsp garlic powder
* 1 tsp onion powder
* 2 carrots
* Pistachios,
* Olives,
* 3 ice cubes
* 6 tbsp almond flour (for keto and low-carb)
* Mozzarella cheese

Instructions:
* Grind the chicken: Grind the chicken and garlic together.
* Sauté the mushrooms: Sauté the chopped mushrooms until the water evaporates.
* Mix the dry ingredients: In a separate bowl, mix the eggs, spices, cheese, and almond flour (for keto). For non-keto, add the other flours as well.
* Combine all ingredients: Combine the ground chicken mixture, sautéed mushrooms, and the dry ingredients. Add chopped carrots, pistachios, olives, and cheese. Mix well.
* Form the sausage: Spread the mixture onto cling film and roll it tightly. Wrap the roll in foil.
* Cook: Place the wrapped sausage in a large pot of boiling water and simmer for 80 minutes.
* Cool and store: Cool the sausage completely before refrigerating or freezing.
