Spiced Orange Christmas Cake in a Silicone Mold 🎄

Ingredients
2 cups all-purpose flour
1 tsp baking powder
½ tsp baking soda
1 tsp cinnamon
½ tsp ground nutmeg
Pinch of salt
½ cup olive oil or melted butter
1 cup granulated sugar (or sugar alternative)
3 large eggs
1 tsp vanilla extract
Zest of 2 oranges
½ cup fresh orange juice
1/3 cup milk (dairy or non-dairy)

For Decoration:

Powdered sugar (or sugar-free alternative)
Glazed orange slices or fresh cranberries
Edible gold stars or sprinkles (optional)

Instructions
Preheat the Oven:
Preheat your oven to 170°C (340°F). Lightly grease your silicone mold with oil or butter.

Prepare the Dry Ingredients:
In a large bowl, sift together the all-purpose flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

Mix the Wet Ingredients:
In another bowl, whisk together the olive oil (or melted butter), sugar, eggs, vanilla extract, orange zest, orange juice, and milk.

Combine the Mixtures:
Gradually fold the dry ingredients into the wet ingredients, mixing until just combined. Avoid overmixing to keep the cake tender. If using, fold in nuts and dried fruits.

Pour into Mold:
Pour the batter into the greased silicone mold, filling it about ¾ full to allow room for rising.

Bake:
Place the silicone mold on a sturdy baking tray for stability. Bake for 35-45 minutes, or until a toothpick inserted in the center comes out clean. Baking time may vary based on your mold's size and shape.

Cool and Unmold:
Allow the cake to cool in the silicone mold for about 10 minutes. Carefully unmold onto a wire rack to cool completely.

Decorate:
Dust the cake with powdered sugar for a snowy effect. Add festive touches like glazed orange slices, cranberries, or sprinkles to suit the holiday spirit.
