If you're already familiar with sourdough, you're going to find that gluten free is actually not much different. In fact, we pretty much just change the flours we use to feed it!

However, it can be quirky, plus your gluten-free starter might behave a little differently. Your baked goods might not turn out the same, but that doesn't necessarily mean bad!

And when something doesn't turn out, don't despair! Duds come out of all our kitchens, especially when we're learning something new. And gluten free is no exception. 🙂
