Six Simple Shortbread Cookies from One Easy Dough

Shortbread is an easy Three Ingredient Cookie and it's a Christmas Classic.
Shortbread Recipe makes 24 Slice & Bake Cookies and is easily doubled.
All of these variations bake at 325F on the Center Rack of the oven for 20-24 minutes.

Plain Shortbread Recipe
1 1/4 Cup, 150 grams, AP Flour
1/2 Cup, 60 grams, Powdered Sugar
10 TBSP Softened Butter
1/2 - 1 Tsp Almond Extract, Vanilla Extract, or other flavoring like Lemon Extract

Chocolate Shortbread Recipe
Basic Recipe plus:
2 TBSP Unsweetened Cocoa
1 TBSP Granulated Sugar
1 TBSP Water

Marbled Slice & Bake Shortbread Cookies
Divide dough into three pieces and color one dough red and one dough green.
Can also make a Marbled Cookie with Plain and Chocolate Doughs!
Break off pieces and lay side by side to form a rectangle.
Fold the dough over onto itself twice. Gently shape to 1 1/2 inch thick rectangle.
Cut into two pieces and roll into logs.
Refrigerate for 1 hour prior to slicing and baking.

Slice & Bake Shortbread Cookies with Sprinkles
Use Plain or Chocolate Dough, shape into logs, roll in Sugar Crystals.
Refrigerate for 1 hour prior to slicing and baking.

Slice & Bake Two-flavored Shortbread Cookies
Make logs with both Plain and Chocolate Shortbread. Cool in the refrigerator.
Slice logs in half the long way. Press together one half of each dough together.
Refrigerate 1 hour before slicing and baking.

Chocolate-Dipped Almond Shortbread Cookies
Bake Shortbread in an 8 x 8 pan. Score into 32 Triangles prior to baking.
After baking and cookie has cooled for 5 minutes, slice through the score lines.
Let cool in the pan prior to removing.
Dip in Chocolate and Nuts
1/2 Cup Chopped Nuts
1/2 Cup Chocolate Chips, melted...add 1 Tsp Shortening or Solid Coconut Oil
