This week I look at Chinese artichokes, also known as crosnes (Stachys affinis), are small, knobby, white tubers from the mint family. They are native to China and have a crisp texture and a mild, nutty flavor with hints of artichoke and sunchoke. Often used in gourmet cuisine, they are versatile and can be eaten raw, pickled, sautéed, or added to soups and salads. Their unique appearance and delicate taste make them a prized, though relatively rare, ingredient in culinary circles.
