Spinach & Feta Butternut Squash Boat 🎄

Ingredients
1/2 medium butternut squash
1 tablespoon olive oil (for roasting)
1 cup frozen spinach
1 red onion (sliced)
2 cloves garlic (minced)
1/2 cup crumbled feta cheese
1/4 teaspoon ground nutmeg
1/4 teaspoon black pepper
Salt (to taste)
1 tablespoon olive oil (for sautéing)

Instructions
Roast the Squash
Preheat oven to 180°C (350°F). Brush the squash halves with olive oil, and place them cut side down on a baking tray. Roast for 35-40 minutes, until tender and lightly caramelized.

Prepare the Filling
Heat 1 tablespoon olive oil in a skillet over medium heat. Add the sliced onion and garlic and sauté until softened (3-4 minutes). Stir in the spinach, nutmeg, pepper, and salt. Cook for 2-3 minutes, until heated through.

Stuff the Squash
Scoop out the seeds and some of the flesh from the roasted squash to create a hollow, leaving enough flesh to support the shell. Mix 2-3 tablespoons of the scooped squash into the spinach filling, then spoon the filling into the hollowed-out squash halves. Press gently to pack it in.

Final Bake
Sprinkle 1/2 cup of crumbled feta cheese on top of the filling and return the squash to the oven. Bake for 10-15 minutes, until the filling is heated through and the feta is golden.

Serving Suggestion
Slice each stuffed squash half into portions and serve warm.
