Best Vegetable Dum Biryani I वेजिटेबल बिरयानी I Recipe by India On A Plate

Vegetables are first marinated in yogurt/curd spices for 20 minutes then cooked until just tender to created biryani masala gravy. Next they are layered twice with cooked basmati rice & finally garnished with cilantro leaves, fried onion, & saffron water. Finally the pot is covered and our vegetable biryani is simmered (dum) to perfection!

Ingredients For Marinating Vegetables:
1 whole cauliflower - hard stems & leaves removed then cut into florets
2 large potatoes - peeled & cute into bite size cubes
1 red onion - sliced
2 tbsp cilantro/coriander leaves
1 cup yogurt/curd - whisked
3 tbsp biryani masala
1/4 tsp turmeric powder
1/2 tsp red Kashmiri chili powder
Salt to taste

Ingredients For Cooking Rice:
1 cup Basmati rice
1 tsp ghee - clarified butter
2 cups water

Ingredients For Layering/Garnishing Biryani:
2 tbsp cilantro/coriander leaves
1/2 cup fried onions - readymade or you can fry them yourself
2 tbsp saffron water - mix few strands of saffron in 2 tbsp water

Other Ingredients:
3 tbsp cooking oil

Cooking Instructions:
Marinade & mix well all ingredients listed above for Marinating Vegetables
in a large bowl. Set aside to marinate for 20 minutes

Toast Basmati rice in a pan with ghee for 1 minute
Next add water and steam in a steamer or pressure cooker for 11 minutes
Let rice rest with lid closed for about 15 minutes
(Be sure to add ample water in steamer or pressure cooker
before you start cooking)

While the rice in cooking add cooking oil to a large nonstick pot
Once oil is hot add marinated vegetables to it and stir fry for 5 minutes
Add salt to taste then add 1 cup of water or as needed
Mix well then cover pot with lid and simmer on medium low for 15 minutes
or until vegetables are cooked & tender
Open pot lid and transfer after the vegetables to a bowl
Remove rice from steamer or pressure cooker & spread it in a plate
Layer half the cooked rice over the vegetables that are in the pot
Add back vegetables that we had removed & layer with remaining rice
Garnish rice with cilantro/coriander leaves, fried onion & saffron water
Cover pot & let simmer on low for 15 minutes to dum the biryani
