Guilt-Free Mayo: Healthy & Creamy Spread

Ingredients:

5 peeled boiled eggs (boiled for 6 to 10 minutes)
50 ml pickle juice (water from pickles)
Salt and pepper (to taste)
15 ml olive oil
1 tablespoon mustard

Instructions:
Boil the eggs for 6 to 10 minutes, depending on your desired yolk consistency, then peel them.
Place the boiled eggs in a blender or food processor.
Add the pickle juice, salt, pepper, olive oil, and mustard.
Blend until smooth and creamy. Adjust the seasoning to taste if necessary.
Transfer the mayo to a jar or container and refrigerate. It will keep for about 4-5 days.
