Making Pasta By Hand and Some Tasty Sauces
Egg pasta. Tagliatelle & Pappardelle. Gnocchetti Sardi & Cavatelli.
Homemade Meatballs & Sauce:
8-10 servings
Meatball Ingredients:
2 lb ground beef
1 cup parmigiano reggiano, grated
1 cup breadcrumbs
3 large cloves of garlic, minced
1 large whole egg
¼ cup parsley, chopped
1 tsp salt
A few cracks of pepper
Sauce Ingredients:
3 tbsp extra virgin olive oil
3 large cloves of garlic, minced
3 28 oz cans of crushed tomato
To Make the Meatballs & Sauce:
Combine meatball ingredients and mix together until just fully incorporated
Divide and shape mixture into 1-2 inch sized meatballs depending on the size you want - the smaller they are the faster they will cook!
Start on the Sauce, Heat olive oil and 3 cloves of minced garlic over medium low heat until soft and translucent
Add crushed tomato to garlic and oil and let simmer until meatballs are done browning
While sauce is simmering, brown meatballs in a saute pan with 1-2 tbsp of olive oil over medium low heat by letting them simmer until golden and rotating until most sides are crispy and browned
Once browned on most sides, add meatballs to sauce to continue cooking. Repeat with any remaining meatballs.
After all meatballs are finished browning, add a few tablespoons(or all) of the browned bits and deliciousness to your pot of sauce for extra flavor!
Cook meatballs in tomato sauce on simmer for at least 30 minutes until cooked through
TIP: The larger the meatballs, the longer you’ll need to simmer
Asparagus & Mushroom Pasta:
Ingredients:
3 TBSP olive oil, plus more
¼ cup Butter
1 lb Asparagus, trimmed & cut into quarters
12 oz mushrooms, sliced
2 shallots minced
3 cloves garlic, minced
16 oz pasta
¼ cup pasta water
1 cup parm
Crushed Red Pepper
Add olive oil & half the butter to pan over medium low heat until melted
Add asparagus, season with salt and cook until softened, 5-6 mins
Add mushroom & other half of butter and cook until softened, 3-4 mins
Move veggies to outer circle and add shallots & another drizzle of olive oil and simmer until translucent
Make an opening in the center, add garlic, and another drizzle of olive oil and simmer until fragrant
Mix all together, and season with salt and pepper
Add cooked pasta, pasta water and parm
Top with more parm and crushed red pepper & enjoy!
Homemade Basil & Walnut Pesto
Basil Pesto
2 Servings
Ingredients:
2-3 Cloves Garlic, roughly chopped
1/3 cup Walnuts or Pine Nuts
2 cups Basil, Gently Packed
1/2 tsp Salt
1/4 tsp Pepper
1/2 cup(or more) Olive Oil
1/2 cup Parm, grated
Directions:
Using a Food Processor or Mortar & Pestle, add nuts & garlic and blend until mixture is fully combined.
Add in basil, salt & pepper and blend.
While running, add your olive oil into the mouth of the food processor (or into mortar & pestle if using).
Add Parmesan & blend once again until fully incorporated
Add more olive oil depending on texture/consistency preference & Enjoy!
Lion's Mane Scampi Sauce:
Ingredients:
6-8oz Lion’s Mane Mushroom
Butter [2TBSP + 1/2 Stick for Sauce]
3 Cloves Garlic
2 TBSP Olive Oil
Lemon Juice
Parsley
Parmesan
8 oz pasta of choice
Directions:
Heat 2 TBSP butter over medium low heat
Add Lions Mane mushroom, cut into small pieces
Caramelized the mushrooms in a single row, working in batches to allow a sear on each side of mushroom until golden and crispy
Once golden, move to a plate or paper towel to stay crisp
Add butter to same pan & let it soak up the mushroom bits
Add garlic, olive oil, lemon and parsley & mix all together
Add in your favorite pasta & your carmelized lions mane mushroom
Top with Parmesan & more parsley and Enjoy!
Broccoli Garlic Sauce:
2 servings
Ingredients:
Drizzle of Olive Oil
1/4 cup diced Onion
2-3 Cloves Garlic, minced
1/2 Stick Butter
Head of Roasted Broccoli
Crushed Red Pepper
Parmesan
¼ cup Pasta Water
Salt & Pepper to taste
8 oz pasta of choice
Directions:
Cut broccoli into bite sized pieces and toss in olive oil, salt and pepper
Roasted at 350F until perfectly crispy, depending on size should be around 20-25 mins
Heat oil over medium heat, add onions and cook for 1 minute, until they begin to soften
Add garlic and simmer tougher until translucent and fragrant
Mix in crushed red pepper
Add butter and let simmer all together for about 2 minutes
Add in your favorite pasta, roasted broccoli, parmesan and pasta water
Toss all together until pasta becomes nice and creamy from the cheese and starchy pasta water
Top with more cheese and crushed red pepper & Enjoy!
