In Tunisia, the extraction of Olive Oil is gradually moving to modern milling methods. Just about half of all olive extraction mills in Tunisia use traditional methods. Just 30 km outside the Tunisian capital Tunis, farmer Abdaziz Misfare runs a traditional Olive Oil extraction mill. Misfare calls olives key to Tunisia's civilisational heritage and extraction by natural methods, which is a gift from ancestors. Tunisia is among the world's top exporters of olive oil. Last season Tunisia's olive oil exports brought in a record $1.65 billion in exports. The olive harvest season begins in October and runs until the end of February. Watch the video to learn more.
