Masala Paneer | Paneer Curry | and Perfect (every time) Rice

Rich and creamy, this dish will satisfy the soul! Along with this delicious Masala Paneer I show the easiest possible way
to create clump-free, non-mushy rice with seperate grains. Perfectly cooked every time .... guaranteed.

Ingredients:

for Masala Paneer:

2 tbsp ghee (or oil)
450g paneer
1 tsp fennel seeds
1 tsp cumin seeds
1 bay leaf
2 inch stick cinnamon
5 green cardamoms
3 garlic cloves
1 tbsp chopped ginger
2-3 finger chillies
2 tsp Kashmiri chilli powder
1 tsp turmeric
1 tsp coriander powder
1 tsp salt (or to taste)
handful chopped fresh coriander
1/2 tsp kasuri methi
500g blended tomatoes or passata
1/2 cup natural yoghurt (curd)
1/3 cup cream

for Perfect Rice:

1 tbsp ghee (or butter)
2 cups basmati rice
1 tsp salt
freshly ground black pepper
2 3/4 cups boiling water
